Cherimoya Canaria is a compact, upright tree reaching approximately 5 meters in height. Its generously sized, olive-green, oval leaves, measuring around 20cm, feature a soft and velvety underside. The tree produces fragrant, nondescript, green, winged flowers, leading to the development of a large, knobbly, heart-shaped fruit. The creamy white, juicy flesh is soft, delicate, and akin to custard in taste and consistency, offering a delightful blend of sweetness with an excellent lemony flavor. The fruit is accompanied by a pleasant fruity fragrance, and the flesh is smooth, with a slight grittiness near the skin.
Harvesting is optimal from September to November, when the fruit transitions to a lighter green while retaining firmness. To ripen, keep the fruit at room temperature until it develops its characteristic fragrance and slightly softens to the touch.
For maintenance, prune the tree at the end of winter to preserve its shape. Applying a generous layer of mulch and utilizing a potassium-rich fertilizer during spring and autumn contributes to its overall health and vigor.
