White turmeric plant (Curcuma zedoaria)

White turmeric (Curcuma zedoaria), also known as Zedoary or Kachur, is an ancient spice and medicinal herb that belongs to the ginger family. While it is less famous today than its vibrant yellow cousin (Curcuma longa), it was once a staple in spice trades and remains a powerhouse in Ayurvedic and Traditional Chinese Medicine.

Unlike yellow turmeric, white turmeric has a pale, ivory-colored interior and a flavor profile that leans more toward citrus, mango, and ginger with a slightly bitter, camphor-like finish.
